Fine red spring onion has leaves cut to different lengths. Marketed in bunches bound with elastic.
Spring onion is grown 12 months of the year, direct sowing (with a machine) or on nursery (by hand) is done most of the year. In the first case, the seeds germinate and then the seedlings develop; in the second case, which is more frequent, the seedlings are kept in the nursery for up to 30-60 days, after which they are uprooted and transplanted by hand into the open field.
These very old processes, which are often carried out by hand, are possible due to the particularity of the soil (volcanic lapillus) that characterizes the entire Agro- Nonerino production area.
During cultivation, which takes from 60 to 120 days, the seedlings can receive from 5 to 7 phytosanitary treatments also using products allowed in organic farming such as: Laser, Oikos, Copper, etc.
When the bulbs are ready (5-6 cm diameter), they are uprooted with the entire root and brought to the processing center inside plastic crates used only for this purpose.
At the processing center they undergo an initial peeling process (removal of the outermost tunics, those in contact with the soil) followed by cutting the leaves to the desired length and then cutting the roots, which is done in a specially built machine.
